The Getting Started Guide indicates, "When creating a profile it is good to have a Tank, Healer, and the rest as DPS." This makes sense in a traditional group situation... but how do you set this up if you are running 2 mages (i.e., no healer or tank)? or a mage and priest (no tank)? or 5 warlocks? or a situation where the tank will be someone's pet? You get the idea.

Basically even if you have a combination of the type you describe, as soon as you attack, someone will start being hit - thus someone is tanking.
My theory is that it's better for you to decide this, rather than the mob.
Bottom line is that, you will always have a tank and DPS situation, even if you have 5 casters. The one being hit will have a different priority.
Say you have 5 locks with a voidwalker tanking. You have a tank (voidy), DPS (the locks) and when the voidy needs a funnel, you have a healer. This means that the toon with the voidy will not be following the same cast sequence as the others, hence should be in a different group.
Say you have 3 shamans. The one being hit becomes the tank. This one will suffer knockback. This will mean that you can no longer have them cast together. If you have this one in a different group, then you can control the casting better. You also have the decision about who heals. It's probably not efficient to have them all heal at once (waste of mana). Once again, a case for having a healer.
The main thing is to think about how this relates to your group and have a plan. Someone will be a tank, someone will heal (even if only with bandages) and the rest will be in DPS mode. This is how any significant fight will go, so it is good to set up your tactics to cope with it.
